Sorbitan tristearate is a lipophilic surface-active agent. It is often used as an emulsifier in combination with polysorbates. It is also used to modify crystallisation of fats. STS is a special food emulsifier used mainly to control the crystal form of fats especially in chocolate manufacturing to prevent chocolate blooming.
It can be added to CBS- and CBR based chocolate compounds for bloom prevention and gloss retention and in this way prolong the shelf life of the end product.
STS provides the following advantages:
- Provides improved bloom stability to CBS and CBR based compounds.
- Improves the initial gloss on CBS and CBR based compounds and improves the gloss retention.
- Ensures a uniform crystallisation of CBS and CBR.
Typically 0.5 – 1% calculated on the finished compound or 2 – 3% calculated on the CBS or CBR content. .
